Pod mlazom vode oprati pastrve, preliti ih limunovim sokom, posoliti, zapapriti i ostaviti 10 minuta. Zatim uvaljati u brašno, u umućeno jaje i mrvice. Na zagrijanoj masnoći pržiti na 180 stupnjeva oko 8 minuta. Ocijediti na kuhinjskom-krep papiru. Ribe redati na papirne podmetač. Po želji peršin malo pirjajte na preostaloj masti i servirati uz pastrve. Za preljev izmiješati sjeckani zeleniš s majonezom, vrhnjem, vinjakom, solju i biberom. Miješajući dodati limunov sok. Servirati uz pastrvu.
